SIMPLE MISO SOUP

This is my most favorite Simple Miso Soup recipe. Miso is known to have been used traditionally to help battle ailments like fatigue, stomach ulcers, inflammation and high blood pressure. The probiotics in Miso also help reduce bad bacteria and it’s known to improve your immune system.

Ingredients
  

  • 1 Package Organic Extra Firm Tofu
  • 1-2 tsp. Miso Paste
  • 2 Cartons Vegetable broth
  • 1 cup Organic mushrooms
  • 3 tbsp Green Onions AKA Scallions
  • 1 package Roasted Seaweed
  • 1 tsp EVOO Extra Virgin Olive Oil spray
  • 1/4 tsp Salt & Pepper

Instructions
 

  • Chop the tofu into cubes.
  • Spray a large stock pot with the EVOO.
  • Add the tofu to the pot on medium heat. Add salt and pepper and stir gently.
  • Slice and add the mushrooms and lightly saute.
  • Next add the miso paste into a small bowl of broth until dissolved.
  • Add miso broth and remaining vegetable broth to the pot.
  • Break the seaweed if needed and add to broth.
  • Let simmer for 10-15 minutes.
  • Top with chopped green onions.
