NEED A QUICK MEAL?
Most families these days are so busy with sports and after school activities that they don’t have time for a sit down family meal. Add a few kids into the mix and you are basically running all over town, watching games, doing drop offs and pick ups. It’s easy to resort to the fast food drive thru’s. I get it. It’s quick, easy, and there’s no clean up.
I like to have some quick GO-TO meal ideas that take 30 minutes and are kid pleasers. You can even make this easy meal before hand and freeze it until you need it. The lean ground beef makes this a high protein meal and the trivial amount of fat keeps bellies fuller longer. These cute little baguettes makes it easy for little mouths and hands to hold and enjoy.
And it’s one of our family favorites ~ Mini Meatballs.
Ingredients:
Lean Ground Beef
1 Egg
1/4 tsp. Garlic Powder
1/4 tsp. Oregano
1/4 tsp. Basil
Salt and Pepper
A Jar of your favorite tomato sauce
Mini Baguettes (or just do the meatballs if GF)
Shredded Mozarella Cheese
Bread Crumbs ( I use the Aleia’s GF Brand)
Directions:
In a bowl mix the lean ground beef, egg, bread crumbs, garlic powder, basil, oregano and salt and pepper.
Roll into mini meatballs and place in a baking dish.
Top with your favorite red sauce or marinara.
Cover with foil and bake in the over at 400 degrees for 30 minutes.
Slice mini baguettes and toast in oven to get crispy.
When meatballs are cooked throughly, add them to the baguettes.
Sprinkle with Mozzarella cheese and put back in the over on low broil for 2-3 minutes or until cheese is golden brown.
Tips
Prep and cook meatballs ahead of time and then store them in the freezer. Do a quick thaw or keep warm in a crock pot for an easy put together meal on a busy night!
