20-MINUTE PERFECT SHRIMP SKEWERS

I love everything Summer and HOT weather! Sunshine, fire fly’s, blue skies, long days, and grilled food. Do you like shrimp? Some people do and some don’t, even in my family. I’m a big fan of shrimp because it’s a great protein, low fat, cooks quickly, and its delicious.

Last night I made this easy and delicious shrimp skewer recipe!

Ingredients

-Shrimp (I typically buy the wild frozen shrimp without additives or preservatives.)

-wooden skewers

-EVOO or Avocado Oil

-Sliced Zucchini

-Sliced peaches

-Salt and Pepper

-Chopped Cilantro

Marinade Ingredients

-2 tbsp. EVOO

-Fresh Lime Juice from 1-2 limes

-1/2 tsp. Basil

-1 Minced Garlic Clove or 1/8 tsp. Garlic Powder

-1/8 tsp. Red Pepper Flakes

-Salt and Pepper

Directions

Preheat the grill to medium / high heat!

Thaw out your shrimp or run them under some room temp water.

Make your marinade by combining the marinade ingredients and mixing well.

Add your shrimp, zucchini, and peaches to your skewers.

Spray EVOO on all of the skewers so they don’t stick to the grill.

Pour marinade over your shrimp.

Add salt and pepper generously onto the skewers.

Add to your Grill. Watch and Flip!

Cooking time 10-15 minutes.

Serve with rice and garnish with fresh cilantro.
