STRAWBERRY LEMONADE CUPCAKES (GF)

The perfect summer treat! Strawberries and Lemonade go together like blue skies and sunshine. These delicious cupcakes are moist and fluffy and may just be the next big hit at that backyard BBQ you’ll be attending.

INGREDIENTS

1 cup Gluten Free Flour (Cup for Cup) Or use regular flour for not GF

1 tsp. baking powder

1/4 tsp. salt

2 Happy Eggs (room temp)

1 tsp. Vanilla

1/4 cup butter OR coconut oil melted

3/4 cup sugar OR Swerve (natural low glycemic sweetener)

3/4 cup Plain greek yogurt

1/4 cup fresh squeezed lemon juice

1-2 tbsp. lemon zest

Fresh Strawberries

Sliced lemon wheels

Cream Cheese Strawberry Icing

4 oz. Neufchatel Cheese

1/4 cup butter (room temp)

2 tbsp. strawberry jam

2-3 cups powdered sugar

Directions

Preheat oven to 350 degrees F.

Mix the dry ingredients in a large bowl.

Mix together the other ingredients – butter, eggs, vanilla, yogurt, lemon juice, and zest.

Pour liquid ingredients into dry and mix well.

Pour batter into cupcake liners and bake for 20-25 minutes. Check centers with knife or toothpick.

Allow cupcakes to cool completely (or your icing will melt)

The Icing

Mix the butter and Neufchatel Cheese. Add in strawberry jam. Mix the powdered sugar in slowly. Chill the icing in fridge for 30 minutes. Pipe the icing onto the cooled cupcakes. Top with sliced fresh strawberry and a lemon slice.
